Beschreibung

Garlic is a two-minute ingredient that takes ten minutes to prepare. The Mince removes the ten. Three or four cloves go into the bowl, the lid locks, and a pull on the cord turns a set of curved stainless blades that chop on each pass. There is no electricity, no blade change, and nothing to plug in, which is why it stays on the counter instead of in a cupboard behind the food processor.

The blades are curved rather than flat, and that curve is the design. Flat blades push garlic around the bowl; curved blades lift and fold the contents back into the path, so the chop is even without shaking the unit. The cord retracts on a spring and the mechanism is sealed away from the food chamber, which means the parts that touch garlic are only the bowl, the lid and the blades, all of which rinse clean in seconds.

The bowl is a thick transparent polymer that does not crack when a blade catches a fibrous stem, and the base is wide enough to stay put on a wet counter. It handles garlic, ginger, chilli, herbs, nuts and breadcrumbs. For anything larger, it is the wrong tool; for the daily work of getting aromatics into a pan, it is faster than a knife and much faster than cleaning a machine.

The best kitchen tool is the one you do not have to think about cleaning.

Where It Belongs

For anyone who cooks with garlic most days and has decided that a knife and a cutting board are more effort than the recipe deserves. It suits small kitchens where a food processor takes up space that is not available, and it suits anyone cooking in a rented kitchen where appliances come and go. It is also the tool that gets used when a recipe calls for a tablespoon of chopped herb and the alternative is washing a machine.

Questions Buyers Ask

Q: How fine does it chop?

A: Three or four pulls gives a coarse chop, six to eight gives a fine mince. The blade height sets the floor, so it will not puree.

Q: Is it dishwasher safe?

A: Bowl, lid and blade assembly are top-rack safe. The cord housing should be wiped, never submerged.

Q: Can it handle nuts?

A: Yes, in small quantities. Almonds and walnuts chop in a few pulls; very hard nuts such as whole nutmeg will not.

Q: Does the cord jam?

A: The cord retracts on a spring and the housing is sealed from the food chamber. Pull in steady strokes rather than short tugs and it stays reliable.

Q: How much garlic fits at once?

A: Four to five cloves comfortably. Overfilling gives an uneven chop rather than a finer one.

Q: Is it hard to clean garlic residue?

A: No. The bowl and blades rinse under a tap in seconds, which is the main reason this tool stays on the counter.

Q: Does it work for ginger?

A: Yes. Fibrous ginger chops cleanly because the curved blades shear rather than press. Cut it into coins first.

Q: How loud is it?

A: Quiet enough to use while someone is on a call in the next room. There is no motor, only the pull cord and the blades.

Q: Can children use it?

A: The blades are sharp and exposed once the lid is off. It should be kept out of reach of children and handled by the blade hub only.

Cord needs steady pulls

Does the job well. Pull in steady strokes rather than short tugs and the cord retracts cleanly every time. Four or five cloves at once is the sweet spot, more than that and the chop is uneven.

Ginger without the fibers

Works better on ginger than a knife does, it shears the fibers instead of mashing them. Also does chillies and parsley without turning them to paste.

Lives on the counter now

Six cloves in four pulls and it rinses clean in ten seconds. I stopped using the food processor for garlic entirely because the cleaning was more work than the chopping.
